- 1 can coconut milk
- 1 onion, diced
- 2 cloves garlic, minced

- 1 tablespoon vegetable oil
- 1 cup spinach
- 1/4 cup cilantro, chopped
Instructions
- In a pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
- Stir in the red curry paste and cook for another minute.
- Add the pumpkin puree and coconut milk, stir well, and let it simmer for 10 minutes.
- Season with soy sauce and lime juice, then add the spinach and cook until wilted.
- Garnish with cilantro before serving.
