- 1 cup pumpkin puree
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 large eggs
- 1/2 cup milk
- 1/4 cup melted butter
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the pumpkin puree, eggs, milk, and melted butter until smooth.
- In another bowl, mix the cornmeal, flour, sugar, baking powder, salt, and cinnamon.
- Combine the wet and dry ingredients, stirring just until mixed.
- Pour batter into a greased baking dish and bake for 20-25 minutes.
- While the cornbread is baking, prepare the cinnamon honey butter by mixing softened butter with honey and cinnamon.
- Once the cornbread is done, let it cool slightly before serving with cinnamon honey butter.
Notes
- For extra flavor, add chopped nuts or raisins to the batter.
- This cornbread is best served warm.
