- 1 cup canned pumpkin
- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon olive oil
- 8 corn tortillas
- 1 avocado, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh cilantro, chopped
Instructions
- In a skillet, heat olive oil over medium heat.
- Add black beans, pumpkin, cumin, and chili powder. Stir to combine and cook for about 5 minutes.
- Warm the corn tortillas in a separate pan.
- Assemble tacos by placing a spoonful of the pumpkin mixture on each tortilla, then top with avocado, feta, and cilantro.
- Serve immediately.
Notes
- These tacos can be made vegetarian by omitting the feta.
- Add your favorite hot sauce for extra heat!
