Ingredients

- 4 cups diced potatoes
- 1 pound sausage
- 1 cup chopped onions
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until translucent.
- Stir in the diced potatoes and cook for about 5 minutes.
- Add the sausage, breaking it up as it cooks.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
- Stir in the heavy cream, and season with salt and pepper. Simmer for an additional 5 minutes.
- Serve hot and enjoy!
Notes
- This chowder can be thickened by adding a cornstarch slurry if desired.
- Feel free to add vegetables such as corn or carrots for extra flavor.
