Ingredients

  • 1 cup chopped onions
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until translucent.
  2. Stir in the diced potatoes and cook for about 5 minutes.
  3. Add the sausage, breaking it up as it cooks.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Stir in the heavy cream, and season with salt and pepper. Simmer for an additional 5 minutes.
  6. Serve hot and enjoy!

Notes

  • This chowder can be thickened by adding a cornstarch slurry if desired.
