- 2 pounds potatoes

Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the potatoes by washing and cutting them into wedges.
- In a bowl, mix the olive oil, salt, pepper, garlic powder, and paprika.
- Toss the potato wedges in the mixture until evenly coated.
- Place the potatoes on a baking sheet in a single layer and bake for 30 minutes.
- Meanwhile, season the pork chops with the same spice mix.
- Heat a skillet over medium-high heat and sear the pork chops for 4-5 minutes on each side.
- Transfer the pork chops to the oven during the last 10 minutes of the potatoes’ baking time.
- Remove everything from the oven and serve hot.
Notes
- For extra crispy potatoes, flip them halfway through baking.
- Let the pork chops rest for a few minutes before serving for juicier meat.
