Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and granulated sugar until light and fluffy.
- Add in the crushed pineapple and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Sprinkle with brown sugar and top each cookie with a maraschino cherry.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool before serving.
