- 1 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs

- 1 cup crushed pineapple, drained
- 1 cup brown sugar
- 1/4 cup chopped maraschino cherries
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Mix in the flour, baking powder, and salt until just combined.
- Fold in the crushed pineapple.
- In a separate bowl, mix the brown sugar and cherries.
- Scoop the cookie dough onto a baking sheet and top each with the brown sugar cherry mixture.
- Bake for 12-15 minutes until golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For a more intense pineapple flavor, add pineapple extract.
