Ingredients

- 1 pound beef tenderloin
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 8 ounces cremini mushrooms, finely chopped
- 1 tablespoon Dijon mustard
- 1 package puff pastry, thawed
- 1 egg, beaten
- salt to taste
- black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef with salt and pepper, then sear in olive oil until browned. Remove and let cool.
- In the same pan, sauté onions and mushrooms until all moisture evaporates.
- Mix in Dijon mustard and let the mixture cool.
- Roll out puff pastry and cut into squares.
- Place a spoonful of the mushroom mix and a piece of beef on each square.
- Fold the pastry over and seal with the beaten egg.
- Bake for 20-25 minutes until golden brown.
- Serve warm.
Notes
- These bites can be made ahead of time and frozen before baking.
- For extra flavor, add herbs to the mushroom mixture.
