Ingredients

  • 1 pound beef tenderloin
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 8 ounces cremini mushrooms, finely chopped
  • 1 tablespoon Dijon mustard
  • 1 package puff pastry, thawed
  • 1 egg, beaten
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef with salt and pepper, then sear in olive oil until browned. Remove and let cool.
  3. In the same pan, sauté onions and mushrooms until all moisture evaporates.
  4. Mix in Dijon mustard and let the mixture cool.
  5. Roll out puff pastry and cut into squares.
  6. Place a spoonful of the mushroom mix and a piece of beef on each square.
  7. Fold the pastry over and seal with the beaten egg.
  8. Bake for 20-25 minutes until golden brown.
  9. Serve warm.

Notes

  • These bites can be made ahead of time and frozen before baking.
  • For extra flavor, add herbs to the mushroom mixture.
