- 4 pieces boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes
- 1 cup fresh spinach
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
- Add the chicken to the bowl and coat it well with the balsamic mixture.
- Place the chicken in a single layer in a baking dish and pour the remaining marinade on top.
- Add cherry tomatoes around the chicken in the dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- In the last 5 minutes of cooking, add the spinach to the dish.
- Remove from the oven and let rest for a few minutes before serving.
Notes
- For extra flavor, marinate the chicken for a few hours before cooking.
- Serve with your favorite side dish.
