Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes
  • 1 cup fresh spinach

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
  3. Add the chicken to the bowl and coat it well with the balsamic mixture.
  4. Place the chicken in a single layer in a baking dish and pour the remaining marinade on top.
  5. Add cherry tomatoes around the chicken in the dish.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  7. In the last 5 minutes of cooking, add the spinach to the dish.
  8. Remove from the oven and let rest for a few minutes before serving.

  • For extra flavor, marinate the chicken for a few hours before cooking.
