- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 2 carrots chopped
- 2 stalks celery, chopped
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 pound gnocchi
- 1 cup heavy cream
- 1 cup fresh spinach, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onions, garlic, carrots, and celery; sauté until tender.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and gnocchi; cook according to gnocchi package instructions.
- Stir in heavy cream and fresh spinach; season with salt, pepper, and nutmeg.
- Simmer for a few minutes until heated through.
- Serve warm.
Notes
- Feel free to add more vegetables like mushrooms or zucchini.
- This soup can be made in advance and reheated.
