- 1 whole chicken
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup onions, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 cups carrots, sliced
- 2 cups potatoes, cubed
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken and brown on all sides.
- Add onions and garlic; sauté until softened.
- Transfer the chicken to a roasting pan. Pour chicken broth over it and add thyme and bay leaf.
- Arrange carrots and potatoes around the chicken.
- Cover with aluminum foil and roast for 1 hour.
- Remove foil and roast for an additional 30 minutes until golden and cooked through.
- Let it rest for 10 minutes before serving.

- For extra flavor, marinate the chicken overnight.
- Serve with your favorite side dishes for a complete meal.
