  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups carrots, sliced
  • 2 cups potatoes, cubed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken and brown on all sides.
  4. Add onions and garlic; sauté until softened.
  5. Transfer the chicken to a roasting pan. Pour chicken broth over it and add thyme and bay leaf.
  6. Arrange carrots and potatoes around the chicken.
  7. Cover with aluminum foil and roast for 1 hour.
  8. Remove foil and roast for an additional 30 minutes until golden and cooked through.
  9. Let it rest for 10 minutes before serving.
