Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon vegetable oil

  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 2 medium onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Season the beef cubes with salt and pepper, and brown them in the pot.
  3. Add the onions and garlic, and sauté until softened.
  4. Pour in the beef broth, and stir in the carrots, potatoes, thyme, and bay leaf.
  5. Bring to a simmer, then cover and cook for about 2 hours until the beef is tender.
  6. Stir in the frozen peas and cook for an additional 10 minutes.
  7. Remove the bay leaf before serving.
