Ingredients

- 1 cup quinoa
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups kale, chopped
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions and garlic, sauté until translucent.
- Stir in the mushrooms and cook until softened.
- Add vegetable broth, quinoa, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- In the last 5 minutes, stir in kale until wilted.
- Serve hot.

- For extra flavor, sauté the mushrooms until browned.
- This soup is great for meal prep; it can be stored in the fridge for up to 5 days.
