- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 8 ounces lasagna noodles, broken
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the ground beef, onion, and garlic. Cook until the meat is browned.
- Stir in the Italian seasoning, crushed tomatoes, and beef broth; bring to a boil.
- Add the broken lasagna noodles and cook until tender.
- Stir in the ricotta cheese and half of the mozzarella cheese until melted.
- Serve hot, garnished with fresh basil and the remaining mozzarella.

- This soup can be made ahead of time and reheats well.
- Feel free to add vegetables such as spinach or bell peppers for extra flavor.
