- 1 cup rolled oats
- 1 cup whole wheat flour

- 1/2 cup unsweetened applesauce
- 2 eggs
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup diced apples
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, mix the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, combine the applesauce, eggs, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the diced apples.
- Divide the batter into the muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For added sweetness, consider adding a handful of raisins or nuts.
- Feel free to substitute honey or maple syrup for the brown sugar.
