- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1/4 cup lime juice
- 1 cup salsa
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken thighs and brown on both sides.
- Sprinkle cumin, chili powder, garlic powder, onion powder, salt, and pepper over the chicken.
- Pour in chicken broth, lime juice, and salsa. Bring to a simmer.
- Cover and cook on low heat for about 2 hours or until chicken is fully cooked and tender.
- Shred the chicken with two forks, stir it back into the sauce, and serve.
