  • 8 ounces turkey bacon
  • 2 cups shredded cheese
  • 1 can black beans
  • 1 cup corn
  • 2 bell peppers, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can diced tomatoes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook turkey bacon until crispy. Remove and crumble.
  3. In the bacon drippings, sauté onions, garlic, and bell peppers until soft.
  4. Add ground beef, cooking until browned.
  5. Stir in black beans, corn, diced tomatoes, and spices. Cook for 5 minutes.
  6. Layer the mixture in a baking dish, top with cheese and crumbled turkey bacon.
  7. Bake for 25-30 minutes or until the cheese is bubbly.
  8. Let cool for a few minutes before serving.
