- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tablespoon instant coffee granules
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Dissolve the instant coffee granules in a tablespoon of hot water and add this to the butter mixture along with the vanilla extract.
- Gradually add in the flour and salt, mixing until just combined.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool before serving.
Notes
- For an extra coffee kick, try adding chocolate chips.
- These cookies keep well in an airtight container for up to one week.
