- 4 whole wheat tortillas
- 6 ounces turkey bacon
- 1 cup spinach
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 red bell pepper, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- Salt to taste
Instructions
- In a skillet over medium heat, cook the turkey bacon until crispy. Remove and chop into pieces.
- Add olive oil to the skillet and sauté the spinach and red bell pepper until softened.
- In a separate bowl, mix together turkey bacon, sautéed vegetables, feta cheese, mozzarella, garlic powder, oregano, and salt.
- Spread the mixture evenly on half of each tortilla, then fold the tortillas in half.
- Cook each quesadilla in the skillet for 2-3 minutes on each side, until golden brown and cheese is melted.
- Slice and serve hot.
Notes
- For added flavor, consider adding sun-dried tomatoes or olives to the filling.
- Serve with a side of tzatziki or hummus for dipping.
