  • 4 whole wheat tortillas
  • 6 ounces turkey bacon
  • 1 cup spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • Salt to taste

Instructions

  1. In a skillet over medium heat, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. Add olive oil to the skillet and sauté the spinach and red bell pepper until softened.
  3. In a separate bowl, mix together turkey bacon, sautéed vegetables, feta cheese, mozzarella, garlic powder, oregano, and salt.
  4. Spread the mixture evenly on half of each tortilla, then fold the tortillas in half.
  5. Cook each quesadilla in the skillet for 2-3 minutes on each side, until golden brown and cheese is melted.
  6. Slice and serve hot.
