Ingredients

- 2 cups chicken, cooked and shredded
- 1 cup leeks, sliced
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 teaspoon thyme
- 1/2 cup cream
- 1 pie crust
Instructions
- Preheat the oven to 400°F (200°C).
- In a pan, heat the olive oil and sauté the leeks until soft.
- Add the shredded chicken, thyme, and chicken broth, and bring to a simmer.
- Stir in the cream and cook for another 5 minutes.
- Pour the mixture into a pie dish and cover with the pie crust.
- Cut slits in the crust for ventilation and bake for 30 minutes or until golden brown.
Notes
- This pie is best served warm.
- Leftovers can be reheated in the oven for best results.
