Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini, sugar, and softened butter.
- Add the eggs, vanilla extract, and lemon juice, mixing well.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Fold in the lemon zest.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For best results, use fresh zucchini and avoid overmixing the batter.
- This bread can be enjoyed warm or toasted with butter.
