- 4 slices turkey bacon
- 1 cup coleslaw mix
- 2 green onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ground ginger
- 2 eggs, beaten
Instructions
- Cook the turkey bacon in a large skillet over medium heat until crispy. Remove and chop.
- Add coleslaw mix, green onions, and garlic to the skillet; stir-fry for about 3-4 minutes.
- Stir in soy sauce, sesame oil, and ginger.
- Push the mixture to one side of the skillet, pour in beaten eggs and scramble until cooked.
- Add the chopped bacon back into the skillet, mix well and serve.

- Feel free to customize with other vegetables like bell peppers or mushrooms.
