- 1 cup lentils
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups vegetable broth
- 1 box (12 oz) spaghetti
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened.
- Add garlic and cook for 1 minute.
- Stir in lentils, crushed tomatoes, tomato paste, broth, oregano, basil, salt, and pepper.
- Bring to a boil; reduce heat and simmer for 25-30 minutes until lentils are tender.
- Meanwhile, cook spaghetti according to package instructions.
- Serve lentil bolognese over spaghetti.
Notes
- Add red pepper flakes for spice.
- Top with grated cheese or nutritional yeast if desired.
