  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups vegetable broth
  • 1 box (12 oz) spaghetti

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Add garlic and cook for 1 minute.
  3. Stir in lentils, crushed tomatoes, tomato paste, broth, oregano, basil, salt, and pepper.
  4. Bring to a boil; reduce heat and simmer for 25-30 minutes until lentils are tender.
  5. Meanwhile, cook spaghetti according to package instructions.
  6. Serve lentil bolognese over spaghetti.
