Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, sauté onion, carrots, and celery until softened.
  3. Add garlic and cumin, cook for another minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add lentils, reduce heat, and simmer until lentils are tender.
  6. Stir in lemon juice and season with salt and pepper before serving.
