Ingredients

- 1 cup lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Rinse the lentils and set aside.
- In a large pot, sauté onion, carrots, and celery until softened.
- Add garlic and cumin, cook for another minute.
- Pour in vegetable broth and bring to a boil.
- Add lentils, reduce heat, and simmer until lentils are tender.
- Stir in lemon juice and season with salt and pepper before serving.
Notes
- For added flavor, garnish with fresh herbs.
- You can also add more vegetables to this soup as desired.
