- 1 pound chicken breast, diced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 6 cups chicken broth
- 1 cup brown rice, rinsed
- 2 cups spinach, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chicken and sauté until browned.
- Stir in the carrots, celery, onion, garlic, ginger, and turmeric; cook until the vegetables are soft.
- Pour in the chicken broth and bring to a boil.
- Add the brown rice and reduce heat to a simmer; cook until the rice is tender.
- Stir in the spinach and lemon juice; season with salt and pepper to taste.
- Serve warm.
