- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 cup grated Romano cheese
- 1/4 cup lemon juice
- 1/4 cup chicken broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a shallow bowl, mix flour, salt, pepper, and half of the Romano cheese.
- Coat the chicken breasts in the flour mixture, shaking off excess.
- In a skillet, heat olive oil over medium heat.
- Add chicken and cook until golden brown, about 5 minutes per side.
- In a small bowl, mix lemon juice, chicken broth, minced garlic, and remaining cheese.
- Pour the mixture over the chicken in the skillet.
- Transfer skillet to the oven and bake for 20 minutes, or until chicken is cooked through.
- Serve hot with the sauce spooned over the top.
Notes
- For extra flavor, marinate the chicken in lemon juice for 30 minutes before cooking.
- Serve with a side of pasta or steamed vegetables.
