  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 2/3 cup freshly squeezed lemon juice
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, cream together the butter and 1/2 cup sugar until light and fluffy. Stir in 2 cups flour and salt until well combined. Press the mixture into the bottom of the prepared baking dish.
  3. Bake the crust for 15 to 20 minutes in the preheated oven, or until firm and golden. Remove from oven and set aside.
  4. In another bowl, whisk together 1 1/2 cups sugar and 1/4 cup flour. Add the eggs and lemon juice, and whisk until smooth and well combined.
  5. Pour the lemon mixture over the baked crust.
  6. Return to the oven and bake for an additional 20 to 25 minutes, or until the filling is set and slightly golden.
  7. Allow to cool completely in the pan before cutting into squares. Dust with powdered sugar before serving.

Notes

  • For a more intense lemon flavor, add some lemon zest to the filling.
