- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- 2/3 cup freshly squeezed lemon juice
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a medium bowl, cream together the butter and 1/2 cup sugar until light and fluffy. Stir in 2 cups flour and salt until well combined. Press the mixture into the bottom of the prepared baking dish.
- Bake the crust for 15 to 20 minutes in the preheated oven, or until firm and golden. Remove from oven and set aside.
- In another bowl, whisk together 1 1/2 cups sugar and 1/4 cup flour. Add the eggs and lemon juice, and whisk until smooth and well combined.
- Pour the lemon mixture over the baked crust.
- Return to the oven and bake for an additional 20 to 25 minutes, or until the filling is set and slightly golden.
- Allow to cool completely in the pan before cutting into squares. Dust with powdered sugar before serving.
Notes
- For a more intense lemon flavor, add some lemon zest to the filling.
- Ensure the bars are completely cool before cutting to maintain clean edges.
