Ingredients

  • 2 cups kale, chopped
  • 1 cup carrots, diced
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 4 cups chicken broth
  • 1/2 cup small pasta (e.g. acini di pepe)
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add onion and garlic to the pot, cooking until softened.
  3. Stir in carrots and cook for another 5 minutes.
  4. Add chicken broth, kale, and Italian seasoning. Bring to a boil.
  5. Stir in the pasta and cook according to package instructions.
  6. Once cooked, add the chicken ham and turkey bacon back into the pot. Season with salt and pepper.
  7. Serve hot.

Notes

  • This soup can be made in advance and stored in the refrigerator.
  • For added flavor, consider adding fresh herbs before serving.
