Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon pepper
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine all the vegetables.
  3. Add olive oil, garlic, Italian seasoning, salt, and pepper. Mix well.
  4. Transfer the mixture to a baking dish and sprinkle with mozzarella and Parmesan cheese.
  5. Bake for 30-35 minutes or until vegetables are tender and cheese is bubbly.
