- 2 cups zucchini, sliced
- 2 cups bell peppers, chopped
- 1 cup cherry tomatoes, halved
- 1 cup onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine all the vegetables.
- Add olive oil, garlic, Italian seasoning, salt, and pepper. Mix well.
- Transfer the mixture to a baking dish and sprinkle with mozzarella and Parmesan cheese.
- Bake for 30-35 minutes or until vegetables are tender and cheese is bubbly.
