- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced tomatoes
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1 cup pasta
- 2 cups spinach, chopped
Instructions
- In a large pot, cook the turkey bacon until crisp. Remove and chop.
- In the same pot, sauté onion and garlic until translucent.
- Add chicken broth, diced tomatoes, carrots, celery, and seasonings. Bring to a boil.
- Stir in pasta and cook until tender.
- Add spinach and chopped turkey bacon. Simmer for 5 minutes before serving.

- This soup is great for meal prep and can be stored in the refrigerator.
- Feel free to add other vegetables or beans for extra nutrition.
