- 4 cups vegetable broth
- 2 cups fresh spinach
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add vegetable broth and bring to a boil.
- Stir in orzo and cook for about 8-10 minutes until al dente.
- Add spinach, oregano, salt, and pepper. Cook until spinach wilts.
- Serve hot with grated Parmesan cheese on top.
