- 1 pound chicken breast, cooked and diced
- 4 slices turkey bacon, cooked and crumbled
- 1 cup diced celery
- 1/2 cup diced red onion
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon red wine vinegar
- Salt to taste
- Black pepper to taste
- 1/4 cup shredded parsley
Instructions
- In a large bowl, combine the cooked chicken, turkey bacon, celery, and red onion.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, red wine vinegar, salt, and pepper.
- Pour the dressing over the chicken mixture and stir to combine.
- Fold in the shredded parsley.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve on a bed of lettuce or in a sandwich.
- Can be made a day in advance for better flavor.
