- 2 cups shredded cooked chicken
- 1 cup queso cheese sauce
- 8 corn tortillas
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1 can diced tomatoes with green chilies
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a pan, heat the olive oil and sauté the onions until they are translucent.
- Add the shredded chicken, queso cheese sauce, diced tomatoes, garlic powder, cumin, and salt. Mix well and cook for about 5 minutes.
- Warm the tortillas slightly to make them pliable, then fill each with the chicken mixture and roll them up.
- Place the rolled enchiladas seam-side down in a baking dish.
- Top with additional queso cheese sauce and shredded cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
- Serve hot and enjoy!
