- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat coconut oil in a pan over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in garlic and ginger, cooking for another minute.
- Add tomato paste and spices, cooking for a few more minutes.
- Pour in the coconut milk and add chickpeas, stirring to combine.
- Simmer for 15-20 minutes until thickened.
- Serve garnished with fresh cilantro.
