- 1 cup whole wheat flour
- 1/2 cup protein powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 2 eggs
- 1 cup cooked sausage, crumbled
- 1 tablespoon maple syrup
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- In a bowl, mix together the flour, protein powder, baking powder, and salt.
- In another bowl, whisk together the milk, eggs, and maple syrup.
- Combine the wet and dry ingredients until just mixed, then fold in the crumbled sausage.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let cool before removing from the tin. Serve warm.
Notes
- These muffins can be enjoyed warm or at room temperature.
- Great for meal prep; just store in the fridge for up to a week.
