- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1 cup enchilada sauce
- 1 cup black beans, rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
- 4 tortillas
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the chicken, cottage cheese, enchilada sauce, black beans, corn, cumin, and chili powder.
- Layer tortillas in a baking dish, and add the chicken mixture on top.
- Sprinkle with shredded cheese.
- Bake for 20 minutes or until bubbly.
Notes
- For extra flavor, add diced onions and peppers.
- Can use turkey instead of chicken for a variation.
