- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup diced tomatoes
- 4 cups chicken broth
- 1 tablespoon taco seasoning
- 1 cup heavy cream
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- In the same pot, add chicken ham and sauté for 2 minutes.
- Add black beans, corn, diced tomatoes, and chicken broth.
- Stir in taco seasoning and bring to a boil.
- Reduce heat and stir in heavy cream.
- Add the chopped turkey bacon back to the pot.
- Simmer for 10 minutes, then serve hot.
Notes
- This soup can be made ahead and stored in the refrigerator.
- Garnish with avocado or cheese for extra flavor.
