Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 2 carrots, chopped
  • 1 tablespoon tomato paste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large ovenproof pot, heat the olive oil over medium heat and brown the lamb shanks on all sides.
  3. Remove the shanks and set aside. In the same pot, add onion and garlic, cooking until softened.
  4. Add the carrots, beef broth, red wine, rosemary, thyme, and tomato paste. Stir well.
  5. Return the shanks to the pot, cover, and place in the oven.
  6. Braise for 2.5 to 3 hours until tender.
  7. Serve warm with the cooking juices.
