- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 sprigs rosemary
- 2 sprigs thyme
- 2 carrots, chopped
- 1 tablespoon tomato paste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large ovenproof pot, heat the olive oil over medium heat and brown the lamb shanks on all sides.
- Remove the shanks and set aside. In the same pot, add onion and garlic, cooking until softened.
- Add the carrots, beef broth, red wine, rosemary, thyme, and tomato paste. Stir well.
- Return the shanks to the pot, cover, and place in the oven.
- Braise for 2.5 to 3 hours until tender.
- Serve warm with the cooking juices.

- For extra flavor, let the lamb shanks marinate in red wine overnight before cooking.
