- 1 lb beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup peas
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, add onion and garlic, sauté until onion is translucent.
- Return beef to the pot and add beef broth, tomato paste, thyme, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour.
- Add carrots and potatoes, continue to simmer for another 30 minutes or until vegetables are tender.
- Stir in peas and cook for an additional 5 minutes.
- Adjust seasoning if necessary and serve hot.
Notes
- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the stew during the last 10 minutes of cooking.
- This stew can be made a day ahead and reheated for enhanced flavors.
