- 2 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil

- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sautéing until translucent.
- Add diced potatoes and cook for another 5 minutes.
- Stir in lentils, vegetable broth, cumin, and thyme.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes, until lentils are tender.
- Season with salt and pepper to taste before serving.

- For a creamier texture, blend a portion of the soup before serving.
