  • 1 pound Italian sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 zucchini, diced
  • 2 tomatoes, diced
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add sausage and cook until browned.
  3. Add onion and garlic, and sauté until softened.
  4. Stir in zucchini and tomatoes, cooking for another 5 minutes.
  5. Pour in vegetable broth and add Italian seasoning.
  6. Season with salt and pepper, then bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Serve hot.
