Ingredients

- 1 pound chicken breast, sliced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
Instructions
- In a bowl, mix the chicken with cumin, coriander, paprika, turmeric, cayenne pepper, olive oil, salt, and black pepper.
- Marinate for at least 30 minutes.
- Cook the chicken in a skillet over medium heat until fully cooked.
- In a bowl, layer quinoa, cooked chicken, tomatoes, cucumber, red onion, and parsley.
- Serve with your favorite sauce.
