Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together rolled oats, whole wheat flour, cinnamon, baking soda, salt, and nutmeg.
- Add grated carrots, applesauce, honey (or maple syrup), and raisins to the dry mixture. Stir until well combined.
- Drop spoonfuls of the cookie dough onto a lined baking sheet.
- Bake for 12-15 minutes or until the edges are golden brown.
- Let the cookies cool on a wire rack before serving.
