Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, flour, baking soda, cinnamon, and salt.
- In another bowl, combine the grated carrots, brown sugar, honey, coconut oil, and vanilla extract.
- Stir the wet ingredients into the dry ingredients, then fold in the walnuts.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden.
- Let them cool on a wire rack before serving.
