Ingredients

- 2 cups chopped romaine lettuce
- 1 cup grilled chicken, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup blue cheese, crumbled
- 2 hard-boiled eggs, sliced
- 1 avocado, sliced
- 1/4 cup bacon, cooked and crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- Begin by cooking the chicken on a grill until fully cooked, about 6-7 minutes per side.
- While the chicken is grilling, prepare the vegetables and slice the hard-boiled eggs.
- Once the chicken is cooked, dice it into bite-sized pieces.
- In a large bowl, combine the romaine lettuce, diced chicken, cherry tomatoes, cucumber, blue cheese, sliced eggs, avocados, and bacon.
- Drizzle with balsamic vinaigrette before serving.
Notes
- Feel free to add other vegetables like bell peppers or radishes for extra crunch.
