A refreshing take on traditional minestrone, packed with vibrant green vegetables and herbs.
Ingredients

- 2 cups vegetable broth
- 1 cup chopped kale
- 1 cup diced zucchini
- 1 cup green beans, trimmed and cut
- 1 cup peas, fresh or frozen
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked pasta
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft.
- Add the broth, kale, zucchini, green beans, and peas. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the cooked pasta, thyme, salt, and pepper. Cook for another 5 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For added flavor, consider adding a squeeze of lemon juice before serving.
- Feel free to swap out vegetables according to season or availability.
