Ingredients

  • 1 cup diced zucchini
  • 1 cup green beans, trimmed and cut
  • 1 cup peas, fresh or frozen
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked pasta

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft.
  2. Add the broth, kale, zucchini, green beans, and peas. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Stir in the cooked pasta, thyme, salt, and pepper. Cook for another 5 minutes.
  4. Serve hot, garnished with fresh herbs if desired.
