- 1 pound boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 cup green enchilada sauce
- 1 can diced tomatoes with green chilies
- 1 cup corn kernels
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 cup diced onion
- 2 cups shredded cheese
- 1 cup chopped cilantro
Instructions
- In a large pot, combine the chicken breasts, chicken broth, and onion. Bring to a boil, then reduce heat and simmer until the chicken is cooked through, about 15-20 minutes.
- Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
- Add the green enchilada sauce, diced tomatoes, corn, cumin, garlic powder, and chili powder to the pot. Stir well and simmer for another 10 minutes.
- Serve hot, garnished with shredded cheese and chopped cilantro.

- For added creaminess, consider stirring in a dollop of sour cream before serving.
- Adjust the spiciness by adding more chili powder or using a spicier enchilada sauce.
