- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley (chopped)
Instructions
- In a medium saucepan, heat olive oil over medium heat.
- Add the rice and toast for about 2 minutes.
- Pour in the vegetable broth, lemon juice, lemon zest, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and let simmer for 18-20 minutes.
- Once cooked, remove from heat and fluff with a fork. Stir in chopped parsley before serving.
Notes
- For a creamier texture, add a tablespoon of butter after cooking.
- Let it sit covered for an additional 5 minutes after cooking for better results.
