- 1 cup pistachios, shelled
- 1 cup cream cheese, softened
- 1/2 cup Greek yogurt
- 1/3 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a food processor, blend the pistachios until finely chopped. Set aside.
- In a mixing bowl, combine cream cheese, Greek yogurt, honey, eggs, and vanilla extract. Mix until smooth.
- Add flour, salt, and half of the chopped pistachios. Stir until combined.
- Pour the mixture into the prepared baking dish and smooth the top.
- Sprinkle the remaining pistachios on top.
- Bake for 25-30 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 2 hours before cutting into bars.
Notes
- For a nut-free version, substitute pistachios with crushed graham crackers.
- Enhance the flavor by drizzling extra honey on top before serving.
