Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. In a large bowl, toss the potatoes with olive oil, oregano, garlic powder, and black pepper.
  4. Spread the potatoes on a baking sheet and roast for 30-35 minutes until golden and crispy.
  5. Remove from the oven and sprinkle with feta cheese and parsley.
  6. Serve warm.
