- 2 pounds baby potatoes
- 1/4 cup olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 cup feta cheese, crumbled
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and cut the baby potatoes in half.
- In a large bowl, toss the potatoes with olive oil, oregano, garlic powder, and black pepper.
- Spread the potatoes on a baking sheet and roast for 30-35 minutes until golden and crispy.
- Remove from the oven and sprinkle with feta cheese and parsley.
- Serve warm.
